When I can see better and be able to use my eye more without straining it, I'll add more pages for different pages for different things. 

When I can get the pages working on my blog, I'll add more pages. For now though, I'm going to have to add everything here as I keep getting an error message when trying to add more pages. ***sigh*** So for now, everything will be here(even salads as I'm struggling with the editing too, it just says saving then errors out....and I can't figure out how to fix it yet...)

Meanwhile, here's this for now. PS....omg, I LOVE hedgehogs!♥ This is a picture of my sweet hedgie. He's since passed away, but he's another angel among us looking down on me.♥ I miss him so much.

Chicken and Rice Casserole


Ingredients


  • 2 (14.25 ounce can) green beans, drained
  • 3 (cup) diced cooked chicken
  • 1 (medium) onion, diced
  • 1 (cup) graded sharp cheddar cheese
  • 1 (10.5 ounce can) cream of celery soup
  • 1 (6.0 ounce package) long-grained wild rice, cooked according to package directions
  • 1 (cup) mayonnaise
  • 1/4 (teaspoon) black pepper

Directions


  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together and pour into a greased 3-quart casserole dish
  3. Bake for 20-25 minutes until hot and bubbly.

Mexican Chicken Casserole


Ingredients


  • 1 (cup) fat-free chicken broth
  • 2 (12.0 ounce) cans chicken
  • 1 (cup) chopped onion
  • 2 (cup) shredded mexican mix cheese
  • 12 (6 inch) corn tortillas
  • 1 (10.0 ounce can) enchilada sauce
  • 1 (4.0 ounce can) chopped green chiles

Directions


  1. Preheat oven 350 degrees
  2. Combine chicken broth, chicken, onions, 1 cup of cheese, enchilada sauce and chiles; stir well.
  3. Place 4 tortillas in the bottom of a 2-quart casserole dish coated with cooking spray. Spoon 2 cups chicken mixture over tortillas. Repeat layers twice, ending with chicken mixture. Sprinkle with remaining cheese.
  4. Bake for 20-30 minutes or until hot and bubbly.
