GREAT AMERICAN POTATO SALAD
(cooks.com)
1 cup Miracle Whip Salad Dressing
1 teaspoon mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups potatoes, cooked and cubed
2 boiled eggs, chopped
1/2 cup onion, chopped
1/2 cup celery, sliced
1/2 cup sweet pickle relish

Combine salad dressing, mustard, celery seed, salt, and pepper; mix well.

Add potatoes, eggs, onion, celery, and pickle; mix lightly. Chill. Makes 6 servings.

Serving Size: 6



Taco Salad

Ingredients:
Lettuce (shredded)
tomatoes (diced)
black olives (sliced and drained)
hamburger
Doritos :-)
taco seasoning
shredded colby jack cheese
sour cream


Directions:
I cook the hamburger and add some taco seasoning to taste and let
cool.


I also add taco seasoning to the sour cream....


Mix all the ingredients (except the doritos and sour cream). Right before you serve...crumble in some doritos and add the sour cream/taco seasoning mixture and eat right away. Enjoy!

16 oz pasta (you choose)
3 from list one totaling 2 lbs
1-2 from list two (1/4-1/2 cup each)
1-4 from list three
1 from list four (1 cup)

List One:
Bite size broccoli florets added to pasta one minute before draining
Bite size cauliflower florets added to pasta one minute before draining
Bite size asparagus spears added to pasta one minute before draining
¼” carrot coins added to pasta one minute before draining
Bite size green bean pieces added to pasta one minute before draining
Snow peas added to pasta one minute before draining
Sugar snap peas added to pasta one minute before draining
¼” zucchini pieces added to pasta one minute before draining
Canned artichoke hearts
Bean sprouts
¼” celery slices
Bite size pieces of cucumber
Thinly sliced fennel
Bite size pieces of avocado
Thinly sliced zucchini
Halved cherry or grape tomatoes
Bite size strips of bell pepper
Diced tomato
Thawed frozen green peas
½” thick rounds of broiled eggplant cut into bite-size pieces
Large whole mushrooms, sliced after broiling
Grilled bell pepper strips
Grilled zucchini pieces
Sauteed celery pieces
Sauteed bell pepper pieces

Chicken breast pieces

3 large green onions, sliced
½ red onion, chopped
2 tsp orange or lemon zest
2 T. cilantro
2 T. basil
2 T. dill

1 tsp rosemary
1 tsp tarragon
other herbs of your choice

List Four:
Ranch dressing
Italian dressing
Caesar dressing
Thousand island dressing
Russian dressing
French dressing
Rice wine vinegar
Lemon juice
Other dressing of your choice


Greek Salad Bites
Ingredients:
Party-size whole-grain sandwich bread
Roasted red pepper hummous
...Brick feta cheese, cut into slivers
English cucumber, peeled and sliced
roma tomatoes, sliced
Lemon pepper seasoning
Directions:
~Spread out the bottom halves of a bunch of these on a cookie sheet or similar
~Layer one slice of bread with the red pepper hummous
~Layer one slice of roma tomato next
~Sprinkle all of the tomato tops with lemon pepper
~Layer a sliver of feta cheese next
~Top with another hummoused slice of bread
~Insert party pick and maybe put a small bowl of greek olives in the center of platter.

Maple Mustard Salad Dressing


1/4 cup yellow mustard
1/3 cup maple syrup
2 TBS red wine vinegar
a handful of walnuts


Combine all ingredients in a small blender, and blend until smooth.


Ginger Dressing


1 garlic clove
2 scallions, chopped
2 TBS fresh grated gingerroot
1 TBS soy sauce
½ cup sesame oil
¼ cup orange juice
2 TBS balsamic vinegar
1 TBS honey mustard or Dijon mustard
1 TBS sugar


Combine all ingredients in a small blender, and blend until smooth.

Are you a fan of the salad dressing served in Japanese restaurants? Basically, Japanese-style salad dressing is made of soy sauce, vinegar, and vegetable oil. To arrange the flavor, other ingredients, such as grated onion, carrots, apples, ginger, and sesame are added. I list some basic Japanese dressing recipes below. Arrange the recipes as you like.

Basic Japanese Salad Dressing 
Ingredients:

1/2 tsp sugar

Onion Flavor Japanese Salad Dressing 
Ingredients:

3 tbsps rice wine vinegar
4 tbsps vegetable oil
1 tsp soy sauce
1/2 tsp sugar
1 tbsp grated onion

Sesame Flavor Japanese Salad Dressing 
Ingredients:
(2 servings)
3 tbsps rice wine vinegar
1 tbsp sesame oil
1 tbsp soy sauce
1 tsp sugar
1/2 tbsp sake rice wine
1 tsp grated white sesame

Ginger Flavor Japanese Salad Dressing 
Ingredients:
(2 servings)
2 tbsps rice wine vinegar
3 tbsps vegetable oil
1 tbsp sesame oil
1 tbsp soy sauce
1/2 tsp sugar
1 tsp sake
1 tsp grated ginger
How to Cook:

1. Mix all the ingredients other than oil in a bowl.
2. Add oil gradually into a bowl and mix well.

Tip: Ginger is also a digestive aid and will sometimes help settle an upset stomach. You can find capsules for this in Wal-Mart.

BACON & Egg Salad
Here's my Bacon and Egg Salad that is slap your mama good!


Bacon & Egg Salad
Hard boiled eggs, chopped
red onion, chopped FINE
bacon bits (real ones, not fake-0 bac-o!!)
REAL mayo (no crappy low fat mayo!!)
sea salt and fresh ground pepper to taste)


It's all measured via your eyeball. I make it with 2 eggs minimum,
most likely 4 or 5 if I'm feeding more than one. :-) If you like tons
of bacon bits, go for it. Go easy on the onions (carbs...that's why
it's chopped FINE, lots of flavor without having to put a bunch in)
